Ru Yuan Restaurant Promoted to Two MICHELIN Stars and Five New One-Star Restaurants Honored
Hangzhou’s local cuisine is experiencing a vibrant revival. By adhering to traditional techniques and classic flavors while relentlessly refining and innovating, chefs are infusing time-honored Hangzhou dishes with contemporary brilliance. Ru Yuan Restaurant stands out as a prime example, earning a promotion to become Hangzhou’s first MICHELIN Two-Star restaurant this year. Their team meticulously sources seasonal local ingredients and crafts intricate layers of flavor, dazzling MICHELIN inspectors with an all-around exceptional Chinese dining experience.
Over the past year, the arrival of renowned domestic and international culinary groups and celebrated chefs has brought a wave of diverse, high-quality new restaurants to Hangzhou. Four of these debuted directly on the list with One MICHELIN Star, while Hangzhou House rose from the MICHELIN Selected category to claim its first Star.
Additionally, 7 restaurants maintained their outstanding performance, retaining their One MICHELIN Star distinction: Ambré Ciel, Guiyu (Xihu), Jie Xiang Lou, Jin Sha, Longjing Manor, Wild Yeast and Xin Rong Ji.
Ru Yuan
Ru Yuan stands amid lush vegetation. Though the menu seems to feature familiar dishes like Xihu fish in vinegar sauce or sautéed shrimps with Longjing tea leaves, each one has been extensively fine-tuned and tweaked. The chef’s personal character shines through in the meticulous details such as in the gold medal braised pork which exudes winey aromas – a preparation were the pork is sliced thinly and shaped into a pagoda for perfect texture and exquisite plating.
Hangzhou House
Close to Lingyin Temple and Amanfayun resort, this rustic-style restaurant has a serene vibe. On the menu, classic Jiangzhe dishes get a refined makeover with some creative and surprising combinations. The signature double-boiled deboned chicken with termite mushrooms is loaded with deep flavours. The signature rice cake in chopped crab sauce is another standout. House-brewed fruit wines, such as bayberry, plum and lychee, are also worth a try.
L'éclat 19
L’éclat 19 is nestled in a wooded valley on the southern shore of West Lake. The journey to the place itself is quite an experience. Open for dinner only, it offers two tasting menus that keep pace with the seasons, both signed by chef Olivier Elzer. Gallic classics are given refined Chinese twists – the bread is served with butter infused with the Chinese Moutai liquor. Top notch ingredients are sourced globally; creative sauces deliver layered flavours.
Sense
Full-length windows allow diners to bask in the lush greenery of Xiang Lake. The kitchen is under a white dome with jars of fermenting food on a round island, like a place of worship. Two set menus showcase modern French cuisine crafted with Chinese produce. Ginseng fermented in honey imparts both a kick and a bitter-sweetness to the creamy ice cream and the dinner rolls are steamed like Chinese buns before being baked.
Song
Jade-coloured archways, silk-clad panels and organic light fixtures evoke a classical Hangzhou garden with a stylised touch. Similarly, the seasoned fine dining kitchen team adds novel twists to Ningbo classics. Marinated raw crab in a spicy sour sauce boasts briny sweetness, gelatinous texture and buttery roe while crispy skin pigeon leg is deboned and stuffed with the bird’s breast.
Yu Zhi Lan
This landmark of Sichuan cooking from Chengdu opened this outpost in Hangzhou in 2024. A Shikumen-style residence circa 1930s has been transformed into an elegant venue dripping in retro charm. In line with the brand’s ethos, two set menus highlight natural flavours and the 24 taste profiles of Sichuan cuisine with refined, well-crafted dishes. In addition, this branch uses ingredients that are uniquely local, such as river shrimp and eel from Qiantang River.
Hangzhou Welcomes Its First MICHELIN Green Star Restaurant
The debut of Pu Zhu as Hangzhou’s inaugural MICHELIN Green Star restaurant stands out as a defining highlight of this year’s selection. The restaurant has established a comprehensive framework illustrating its commitment towards a more eco-friendly approach to fine-dining—from sourcing local ingredients to promoting vegetarian cuisine, while preserving traditional dietary philosophy.
Its founder seamlessly integrates the Chinese ecological wisdom of "harmony between nature and humanity" (tian ren he yi) into modern gastronomy, setting a benchmark for the industry. By balancing mindful consumption with cultural heritage, Pu Zhu delivers an experience that is as enlightening as it is delicious.
Pu Zhu
Adjacent to Xiangji Temple, this Jiangnan-style villa stands in a manicured garden with bamboo trees, rock works and water features. In the absence of a la carte options, diners pre-order the classic or seasonal set menu. Quality globally sourced produce is finessed by both Chinese and Western techniques into neat creations with potential health benefits. Tree tomato soup with seaweed from the waters of Xiapu kicks off the meal on a refreshing note.
